Winter Kale Salad



This was a salad we had last week with the Rosti.  Although it is mostly a typical cheese, fruit, nut salad, I thought I would post it because of the raw kale.  Who knew you could eat a green like that raw and that it would still taste good?!?


You do need to take some extra care to remove all the stems.  But I just love eating a hearty green like this in the winter.  It is a nice change from a regular lettuce salad.  Also, I love pears!  Try this one!  In fact this whole meal was amazing.  




Winter Kale Salad

1 small bunch of kale, stems removed, cut or torn into small pieces
1/4 cup pecans, toasted and chopped
1 green onion, chopped
1 pear, peeled and sliced
Kosher salt and freshly ground black pepper
2 tablespoons balsamic vinegar
3 tablespoons extra-virgin olive oil
Crumbled blue cheese, for garnish

Toss kale, pecans, green onion, and pear together in a medium bowl. Sprinkle with salt and pepper. Drizzle vinegar then oil over the top. Toss and serve with a sprinkling of cheese.

  1. Not only does this type of dish taste great...but it gives you so many good nutrients! Ryan is growing kale in our garden. I can't wait to try this out. Thank you for sharing. I hope you have a lovely evening!
