I love these. My mom and sister have been making them for a while. I started making them a few years ago at Christmas. They are just crushed up Oreos, mixed up with cream cheese and then dipped in chocolate bark. I think they taste best really, really cold, because I like the crispy, chilled bark coating. Scot says he likes them after they have lost their chill a little.
Oreo Truffles

1 package Oreo cookies
1 8oz. package cream cheese, at room temperature
Chocolate bark (sometimes called Almond bark or candy chocolate)
Finely crush Oreo cookies in a food processor. Or you can place in plastic zip-top bag and crush with rolling pin or by hand.
Put Oreo crumbles in large mixing bowl. Add softened cream cheese. Combine. I found the best way to combine the cookie crumbles and the cream cheese was to use a pastry cutter. You can also use your hands or the back of a spoon.
Roll the mixture into balls or flatten out and cut out with small cookie cutters. Melt chocolate bark over double boiler. It helps to cut bark into smaller pieces. You want to melt it over as low of heat as possible. If bark (or chocolate) gets too hot, it will harden up and is no longer usable.
Dip each truffle in the melted bark. It works best to use two forks to lift them out and place on wax paper to dry.
You can decorate by dyeing the remaining bark (if you using white) and drizzle it in a zig zag fashion over the dry truffles using a fork. You can also do this with regular chocolate bark (brown).
Refrigerate and serve cold. They taste best really cold.
