Crispy Black Bean Tacos with Feta and Cabbage Slaw


I am kind of in love with these.  a.  They are so so good.  b.  They are pretty cheap.  c.  They are too easy.  d.  Healthy and vegetarian.  

The perfect weekday meal.  I am for sure going to make these again.  And often.  

I know this is something my sister, Jen, will love.  She is a vegetarian and in college.  I would have been all over this recipe in college.  

However, this is not just for the struggling student.  ;)  I would say that this recipe is perfect for two people.  I made 6 tacos instead of 4 (and we each ate 3).  


Crispy Black Bean Tacos with Feta and Cabbage Slaw

1 15-ounce can black beans, drained
1/2 teaspoon ground cumin
5 teaspoons olive oil, divided
1 tablespoon fresh lime juice
2 cups coleslaw mix
2 green onions, chopped
1/3 cup chopped fresh cilantro
4 white or yellow corn tortillas
1/3 cup crumbled feta cheese
Bottled chipotle hot sauce or other hot sauce

Place beans and cumin in small bowl; partially mash. Mix 2 teaspoons olive oil and lime juice in medium bowl; add coleslaw, green onions, and cilantro and toss to coat. Season slaw to taste with salt and pepper.

Heat 3 teaspoons olive oil in large nonstick skillet over medium-high heat. Add tortillas in single layer. Spoon 1/4 of bean mixture onto half of each tortilla; cook 1 minute. Fold tacos in half. Cook until golden brown, about 1 minute per side. Fill tacos with feta and slaw. Pass hot sauce alongside.

  1. I LOVE THESE TACOS. I saw these on smitten kitchen or caras cravings i think? and i made them maybe once a month when i first found them. the only thing i do differently is i don't put the olive oil in the cole slaw bc it takes over (could just be my olive oil, it was cheap obv). so i just use veg oil and sometimes a dollop of mayo if i'm feeling fancy. but yeap, these are awesome and the leftovers are just as good. love them. how'd you get your tortillas so perfect looking?

  2. thank you for reminding me! i totally meant to mention that i originally found this on cara's blog (http://carascravings.blogspot.com/2010/08/black-bean-feta-tacos.html) but that i went back to the original recipe. cara is awesome at making recipes healthier so she changed up the recipe to reduce the oil and bake them instead of pan fry them. so check that out. i think if you pan fry them, they will probably be easier to get the crispy/fried texture. however, if you want to keep them healthy, go with cara's recipe! as for the oil, i used veg. oil too. i dont like the taste of olive oil with mexican-ish food either. i am a really good food blogger, should have made note of that.

  3. Tacos are huge here in Austin, and we've done like the natives and allowed them to infiltrate our diets. We eat them at least once a week! These sound great. I think black beans and feta cheese were born to be paired together. So very good!

  4. These tacos have been a favorite in our household for quite a while! My mom started making them recently too and she is thrilled that my dad loves them (this is a guy who up until recently had a pretty limited palette and wouldn't even consider a vegetarian meal.)

  5. These definitely do sound like the PERFECT college/med student (for me!)/anyone who likes good food recipe. I always love a good mexican recipe and when it's healthy...even better!
